Hosare hoi (Hearty Pumpkin Stew)

INGREDIENTS for 4 persons


  1. 1 kg fresh pumpkin 
  2. 2 small onions, chopped 
  3. 250 ml water 
  4. 2 tomatoes, chopped 
  5. 1 tbsp turmeric powder 
  6. 1 tsp red chili powder 
  7. 1 tsp salt 
  8. 30ml cooking oil

Procedure:

Cut the pumpkin in half and take out the seeds before you cut it into bite size chunks. Leave the skin on. Heat the oil in a frying pan, add the chopped onions and cook until transparent. Then add tomatoes and spices (chili powder and turmeric) and fry on high heat for 5 minutes. Stir in the pumpkin chunks and the salt. Pour 250ml of water over the vegetables and cook over low-heat, covered, for approximately 10 minutes or until the pumpkin is soft.
