How to make Seeraga Samba Rice

Samba rice, the traditional rice of southern India, comes in many varieties. Seeraga Muthu and Seeraga Samba, both aromatic rice varieties, are the most widely available varieties in the United States. Small-grain seeraga samba gets its name from its resemblance to cumin, known as seeragam or seera in Tamil Nadu, and is the most expensive rice grown in this southern Indian state. Seeraga Samba is an ingredient in Biriyani, a traditional Indian dish. When properly prepared, samba rice grains are fluffy and fluffy. The most important thing to know when cooking rice is uncooked to cooked yield. The basic cooking instructions vary little.

Seeraga samba rice is very aromatic. We can use the seeraga samba rice for making Ven pongal, sakkara pongal and paal payasam too.

Step 1
Rinse 1 cup of Seerage samba rice in a fine mesh strainer and soak the rice in a saucepan of water for 15 to 20 minutes. Rinsing and soaking keeps the rice from clumping but also removes nutrients and some of the flavor. Skip this step if you wish.

Pour 1 ¾ cup of cold water into a 1 quart. Sauce pan and add 1 cup Seeraga Samba Rice. One cup of uncooked rice makes about 3 cups of cooked rice. Place a tight-fitting lid on the sauce pan and turn the heat to high.

Bring the water to a boil, reduce the heat to low and let the rice cook until the rice absorbs all the liquid, about 15 to 20 minutes. Do not remove the lid while the rice is cooking. Avoid stirring the rice as the rice breaks easily when the rice is hot.

Remove the pot from the heat when the rice is done and let the rice sit undisturbed for five minutes. Do not remove the lid during this time.
Tip
You can also cook seeraga samba rice in a rice cooker. Many recipes using samba rice instruct cooks to add the unrinsed, uncooked rice to other ingredients in hot or boiling water.
