Method 1 For Vanilla Cake

Separate the eggs and beat the egg whites with a pinch of salt until stiff and chill briefly.

In a bowl mix flour with custard powder or starch with baking powder and finely chopped chocolate and set aside.

Carefully melt in a saucepan of butter and 50g of the white chocolate at the lowest level with constant stirring.
Please melt at the lowest level, so that both ingredients combine well. (You can also put both in a bowl and gently melt in the microwave at 600 watts, but always stir it, every 30 seconds, since it will not work otherwise)
Short cool.

Now beat the sugar, the aroma or pith of a vanilla pod and the vanilla sugar together with the egg yolks on the highest stage white-creamy (about 3-4 minutes)
Now carefully add the butter-chocolate mixture and beat briefly.

Add the flour mixture and stir only until the ingredients have mixed well. The best way to do this is with a spoon or a spatula.

Lastly, fold in the stiff egg whites and add the milk or cream to the spoonfuls.

Put the mass in a well greased form. (All shapes are suitable here)

Now bake the cake at 180 ° C top / bottom heat or 165 ° C circulating air for about 40 - 45 minutes.
(It's best to do a chopstick test after 40 minutes, do not allow any dough to stick to it, please be careful as each oven heats up differently, the baking time can be shortened or extended slightly.)
Mind. Allow to cool for 15 minutes in the mold before dropping.

The cake is pleasantly sweet, but who does not like this can reduce the sugar content at will.
It tastes particularly good when you use vanilla pods instead of vanilla flavor.

The cake stays fresh for a long time and is nicely juicy.

Method 2 for Vanilla Cake

  1. Preheat oven to 180 degrees (convection 160 degrees) and grease a round cake tin.
  2. Put all ingredients in a mixing bowl and stir well with the hand mixer until creamy.
  3. Pour the pastry into the pan and smooth.
  4. Put the cake in the oven and bake for 45 to 60 minutes.

  6. When the cake is cooked, remove from the oven and let rest in the mold for 10 minutes. Then throw on a wire rack and let cool.
  7. Cover the cake with any icing or serve dusted with powdered sugar.
